Simple Chicken Curry

Hi dear ones 😍!!! Watts up... I was really busy so couldn’t update my blog 😞. Sorry about that. I’m back with something that is very simple and easy yet tasty 😉. It is a chicken curry 🍗. It can be a perfect treat for a lazy weekend or during a busy day 👌. It can be prepared in minutes. Who doesn’t like chicken? And if it is too easy then no need to say that…😉😉 there are tons of variations to prepare a simple chicken curry but this is my mom‘s method so it is extra special for me 😊. Along with chicken I have added potatoes  also . The spices along with chicken and potato make this very flavorful 😋. This can be served along with rice, chapathi, appam (laced pancake). Okay then let’s get started.

Preparation time: 12-15 min

Cooking time: 25-30 min

Serves: 3-4

Ingredients

Chicken: 1lb / 500gm

Potato: 1 (big)

Ginger: ¾ tsp (chopped)

Garlic: ¾ tsp (chopped)

Onion: 1 (chopped)

Tomato: 1 (chopped)

Curry leaves: 1 spring

Turmeric powder: ½ tsp

Kashmiri chili powder: ¾ tbsp

Coriander powder: 1 tbsp

Pepper powder: 1 tsp

Garam masala: 1 tsp

Water: ½ - 1 cup

Salt: as needed

Coconut oil: as needed

Method

1.       Heat a pan with oil, when it is hot enough add chopped ginger and garlic. Sauté it well in medium flame.

2.       Add chopped onion and curry leaves.

3.       When the onion gets well sautéed add chopped tomato.

.
4.       When the tomato is mushy simmer the flame and add coriander powder, Kashmiri chili powder and pepper powder.  Sauté until raw smell fully goes on.

5.       Then add chopped potatoes and chicken.

6.       Mix it well with the spices and then add water.  Cover and cook in medium flame till it is fully cooked. Check for salt.

7.       When it is fully cooked add garam masala and cook in medium – high heat till you get the needed consistency. If you want the gravy to be little watery no need to cook further.

8.       Transfer to a serving dish.

9.       Serve hot with rice, roti or appam.

10.   Enjoy.

Notes

1.       You can add coconut milk or coconut paste. If so add after the chicken is completely cooked.

2.       Try to use coconut oil as far as possible.
