Cheese Cake

                                                             No Bake Cheese Cake
                                                               

A cake without baking… omg!!!!!!! . What else you need to surprise your dear ones. Yes it is a perfect treat for your loved ones on Valentine's day💓💓 . Valentine's day is celebrated all over the world as feast of Saint Valentine. Most commonly observed Valentine’s Day tradition and custom is expressing ones love with  exchange of cards, flowers and gifts. It is the celebration of love. People take opportunity on this day to wish “Happy Valentine’s Day “to anyone they love 😍...be it Father, Mother, Brother, sister, Grandparents or Friends. Yes as I said you too can surprise your loved ones with this simple, yummy no bake cheese cake. This cake is too easy to make but the tough part is you have to refrigerate it for 4-6 hrs or overnight. Cheese cake consists of two or more layers. The bottom part is a crust made with crushed cookies/ graham crackers. The thickest layer consists of cream cheese (soft, mild tasting cheese made with milk and cream), sugar, cream and eggs. As a topping you can add fresh or canned fruits, fruit puree, chocolate or any other topping as you like. The first cheese cake I had was strawberry cheese cake from cheesecake factory restaurant😋😋😋😋 … I loved it (Though I am posting a different cheese cake).  For this cheese cake a spring form pan is a must if you want it to look like a cake or else you can use any dessert cups. Make sure you put rest of the cake back in the refrigerator as soon as you eat it or else it just melts and becomes a pudding.  Okay then let’s get started….
  
                                                           


Total time:  overnight + 25 min

Serves: 6-8


Ingredients

8 inch spring form pan: 1

Graham crackers: 1 ½ cup

Brown sugar:  1/3 cup

Melted butter: 1/3 cup

Cinnamon powder: ½ tsp (optinal )

Cream cheese: 2 packets (8 oz pack, room temperature)

Lemon juice: 2 tsp

Heavy whipping cream: 500 ml

Sugar: ½ cup

Cherry pie filling /any fresh fruits: as needed (for topping)



Method

1.       Crush graham crackers in to crumbs, the easiest way to do so is to put those crackers in a blender and pulse it for 2-3 times.  You can also roll a roiling pin over a Ziploc bag filled with graham crackers.
                                                                    

2.       Grease the base of a spring form pan with butter.

3.       Transfer those crumbs to a bowl and add brown sugar mix it well.
                                                                
4.       Then add melted butter. Mix it well.
                                                               

5.       Press this crumbs butter mixture to the base of spring form pan.
                                                       

6.       Chill it till it becomes firm, it will take around 20-25 min.

7.       In a medium bowl beat together cream cheese and lemon juice until soft.
                                                                


8.       Add whipping cream and sugar and beat it till it’s thick and stiff.
                                                              

9.       Pour this mixture in to chilled crust.
                                                                
10.   Spread the mixture evenly on the chilled crust.
                                                                

11.   Top with pie filling or any other topping of your choice.
                                                                 

12.   Chill for several hours or overnight.
                                                                  

13.   Just before serving remove the sides of the spring form pan.
                                                             




14.   Slice the cake in to serving platter.
                                                               


15.   Enjoy.
                                                                


1.       I used Philadelphia cream cheese.

2.       You can increase the quantity of sugar if you like.

3.       You can use any topping like melted chocolate, slices of strawberry, pineapple etc.

4.       If you don’t have a spring form pan; you can use any glass container. Scoop out the needed quantity after overnight refrigeration.

5.       Refrigerate the left over cake as soon as possible.
