Its been a while we had some rice varities to the list 😉  I made vegetable biriyani a couple of times but I forget to click pictures always 😞. Couple of weeks back I made vegetable fried rice and without fail I clicked pictures also. So here it is.... I like all fried rice varieties ... egg, chicken, pineapple. After coming  to the US hubby took me to a dinner date to a Thai Restaurant ,that was the first time I tried pineapple fried rice. I loved it 😍. Haven’t tried pineapple fried rice yet, will try and post soon. Vegetable fried rice is a very simple and easy recipe to try. You just have to assemble all ingredients and have to add one by one. Preparation time: 10 min

Cooking time: 15min (for cooking rice) + 10 min

Serves: 3-4


Ingredients

Basmati rice: 2 cups

Garlic: 1-2 tsp (finely chopped)

Chopped carrot: ¼ cup

Chopped beans: ¼ cup

Chopped cabbage:  2 tbsp

Chopped bell peppers: ¼ cup

Fresh / frozen peas: ¼ cup

Spring onion: 3-4 (chop and keep white and green part separate)

Olive oil: 1-2 tbsp

Pepper powder: 1 tsp

Vinegar: 1 tbsp

Soya sauce: 3 tsp

Sugar: 1 tsp  

Salt: as needed


Method

1.       Heat a pan, add oil . Keep the flame high .


2.       When the oil is hot enough add garlic. Sauté it well.
                                                                         

3.       Add beans; cook it for 1-3 min. (High flame)
                                                               

4.       Add peas, cabbage, carrot and white part of spring onion cook in high flame.
                                                                

5.       Add sugar.
                                                                      

6.       Add vinegar, soya sauce and pepper powder. Sauté it well.
                                                                          




7.       Add cooked rice and mix everything together. Keep the flame high to add a smoky flavor. 

                                                                    

8.       Check for salt.

9.       Transfer to a serving dish.
                                                            

10.   Garnish with spring onion (green ).

11.   Serve warm with Gobi Manchurian or  Chilli Chicken Gravy
                                                           


Notes

1. Cook basmathi rice with enough water (three and a half cup). Strain out the excess water once rice gets cooked.Cool the rice completely before adding, You can also use leftover white rice.

2.       Don’t overcook the rice.

3.       You can add chopped mushrooms too.

4.       Add salt after adding sauces.

6.       Adding sugar helps to retain the color of veggies.

7.       Olive oil enhances the taste, try using it as far as possible.
