Here is the recipe for an easy, fluffy, creamy and buttery mashed potato 😋😋. I am not that fond of this recipe.  I like our traditional potato stew, fry and chips. This is my hubby’s favorite recipe, he often suggests this recipe on weekends but as I don’t like I would suggest something else.  Only a very few ingredients are needed to make this super soft potatoes. Mashed potatoes are so velvety and soft that it melts in your mouth. Initially while making this recipe I had a doubt what kind of potatoes are to be choseen for this, after doing a bit of online research I came to a conclusion that Russet potatoes are the best  👌👌. You can also use gold and white potatoes.  The recipe is too simple - boil, peel, mash and add other ingredients, you have a warm creamy bowl of mashed potatoes ready!!! It is slightly different from our Indian style of cooking as we use coconut milk for most of our recipes but here we add milk. Give it a try, who doesn’t like a change 😉. The best combos are baked fish, grilled or baked chicken, stir fried veggies 😊😊. Okay then let’s get started……




Preparation time: 15-25 min

Cooking time: 5-8 min

Serves: 3-4


Ingredients

Russet potatoes: 2 large (2lb, 900gms)

Milk: 1 cup

Butter: 2 tbsp + 1tbsp 

Pepper powder: ½ - 1 tsp

Salt: as needed


Method

1.       Clean the potatoes to remove dirt and mud.
                                                       

2.       Pressure cook the potatoes with enough water till soft.
                                                                   

3.       Peel the skin once the potatoes are cooled.

4.       Mash it with a potato masher or with a spoon. Set aside.
                                                                   

5.       Heat a sauce pan. Add butter.
                                                                        

6.       Once butter starts to melt add milk.
                                                                     

7.       Add mashed potatoes, using a whisk or ladle slowly blend the potatoes and milk mixture.
                                                                    
                                                              



8.       Add salt and pepper.
                                                               

9.       Add a tbsp of butter and switch off the flame.
                                                             

10.   Transfer to a serving bowl.

11.   Serve with any side dish of your choice.
                                                        

12.   We had it with lemon- garlic fish (will be posting it soon).

13.   Cover and place it in a warm oven till ready to be served.

14.   Enjoy.
                                                     


Notes

1.       Add extra tbsp of butter for extra creamy taste.

2.       Add pepper powder according to your taste.

3.       Try to serve this warm.

4.       You can add any herb of your choice to get that extra taste.
