Pachadi

Pachadi  / Beetroot Pachadi
                                                               
                                                       
Here comes a very tasty  sadya / feast dish … its pachadi. Pachadi is another dish which is made with yogurt. Other than yogurt you add coconut, cumin seeds and any fruit 🍍  or vegetable . The fruits mainly used in pachadi are pineapple, grapes and banana; if fruits are used then pachadi is called madhura pachadi. Commonly used veggies to make pachadi are cucumber, carrot, raw mango and beetroot. Here I have used beetroot to make pachadi. It is more or less similar to salad / raita except you add seasoning and coconut 😊. This gorgeous looking beetroot pachadi is an indispensable dish for sadya / feast 😊. It is super easy 😉 and super yummy 😋. Okay then let’s get started…

                                                                 


Preparation  time: 8-10 min

Cooking time: 10-12 min

Serves: 3


Ingredients

Beetroot: 1

Water: 3-4 tbsp

Curd: ¾ cup (beaten)

To grind

Coconut: ½ cup

Ginger: ½ tsp (chopped)

Green chili: 1-3

Mustard seeds: ¾ tsp

Curd: ¼ cup

For seasoning

Coconut oil: 1 tsp

Mustard seeds: ½ tsp

Curry leaves: few

 Red chili: 2


Method

1.       Wash and grate the beetroot as shown.
                                                                       
                                           

2.       Grind the ingredients mentioned under “to grind ” and set it aside.
                                                                         

3.       Heat a pan add the grated beetroot and add 1-2 tbsp of water. Cover and cook it in medium heat till soft. Add more water if needed.
                                                                                

4.       Add the coconut paste to the cooked beetroot, cook in medium flame for 1-2 min. Stir in between. Set aside and allow it to cool.
                                                                       


5.       Once it is cooled completely add beaten curd and salt. Mix it well.
                                                                         


6.       Heat a pan and add items mentioned under "for seasoning " one by one.

7.       Pour the seasoning over the pachadi.
                                                                         

8.       Transfer it to a serving bowl.
                                                                   

9.       Serve with rice.

10.   Enjoy.
