When you have fresh farm picked berries…. What else you want….😊😊Yup we went blackberry picking few days back.  It was fun, going out with friends is always fun 😃. We had gone for apple🍎 and strawberry picking 🍓 before, but this was our first black berry picking experience . 
                                                                         

I love summer as you are blessed with so many different varieties of fruits like blackberry, peaches, strawberry, mango, blueberry, watermelon; fig etc 🍉🍊🍒… 😉each day is a lemonade day 🍋🍋. You get to make all kinds of stuffs like jams, jellies, pies, shakes, smoothies with fresh flavorful fruits 🍹. Here I have tried muffin with blackberries .  It was my friend Annie’s 😍 suggestion to try and post muffin as I have already posted smoothies, cakes, lemonade. It turned out perfect and juicy. My little one helped me to prepare the batter, "Thanks sweetie" 😍😘. Give yourself a nice treat in the morning by trying this muffin recipe 👍.  Okay then let’s get started….
                                                                 
                                                                                   
       


Preparation time: 12-15 min

Cooking time: 20 min

Serves: 18 muffins


Ingredients

Blackberry: 2 cups

Sugar: 1 ¼ cup

Butter: ½ cup (room temperature)

Egg: 2 (room temperature)

Milk: ½ cup (room temperature)

All purpose flour / maida: 2 cups

Baking powder: 2 tsp

Vanilla essence: 1-2 drops

Cupcake liners: 18


Method

1.      Preheat oven to 375 F/ 190C.

2.      Line the muffin pan with liners.
                                                                                 


3.      In a large bowl cream butter and sugar.
                                                                            


4.      Add eggs, one at a time. Mix it well. Add vanilla essence.
                                                                            





5.      Sift flour, baking powder.
                                                                                       


6.      Add the flour mixture to the cream – butter mix. Alternating it with milk. Combine everything together.
                                                                                   


7.      Once it is well combined fold in the washed blackberries. Mix it gently.
                                                                         



8.      Fill the batter two- thirds.
                                                                              


9.      Bake in the preheated oven (375 F) for 20-25min till done, or till toothpick inserted comes out clear. 
                                                                                 


10.  Tasty blackberry muffins are ready.
