Veggie Burger

Inspired from Burger King’s vegetable burger, I too tried that 😊. We just love and crave to eat it whenever we stay away from home 😍. The recipe is pretty  simple and easy. A healthy and scrumptious snack 😋. 

                                                                                  

For Veggie burger we use all kinds of vegetables to make the patty like carrots, beans, potatoes and corn 🌽. The patties are the essence of a burger. Along with patties mayo, lettuce, onion and tomatoes 🍅 add the flavor. Since it is a veggie burger I have used eggless mayo, you use normal mayo too. My hubby loves Burgers so I was tempted to try it 😃. Do give it a try and share your feedback. Okay let’s get started…


Preparation time: 40 min

Cook time: 15 min

Serves: 6


Ingredients

Burger buns: 6

Cheese slice: 6

Onion: 1 (small)

Tomato: 1 (small)

Lettuce: as needed

Mayo / eggless mayo: ½ cup


For patties

Potato: 1 (large)

Carrot: 2

Peas: ½ cup

Corn: ¼ cup

Beans: 8-10

Chili powder / paprika powder: 1 ½ tsp

Cumin seeds: ½ tsp

Bread crumbs: ½ cup

Rice flour/ corn flour/ all purpose flour: ½ cup

Salt: as needed

Oil: as needed (for frying)


 For Eggless mayo:

Water: ¾ cup

Sugar: 1 ½ tbsp

Salt: ½ tsp

Ground mustard: ¼ tsp

Vinegar: 2 tbsp

Lemon juice: 2 tbsp

Powdered milk: 1 cup

Canola oil: 1 cup


Method

1.      Boil potato and mash it. Steam the remaining veggies till it is soft. Take care not to overcook them.
                                                                                                


2.      Mix all cooked vegetables and mash them well.

3.      Add bread crumbs, chili powder/ paprika powder, cumin seeds and salt to the mashed vegetables. Mix them well.
                                                                                        


4.      Make 6 equal sized balls and flatten them as shown.
                                                                               


       

5.      Make a batter by adding rice flour (you can use all purpose flour/ corn flour too) and water.

                                                                        

6.      Dip the flattened balls in the prepared batter and gently roll it in crumbs.
                                                                                 




7.       Fry them till it is golden brown on both sides and set aside.
                                                                        
                                                                              


8.      Wash lettuce leaves and set aside. Cut tomatoes and onions into rings as shown.
                                                                              


9.      To prepare eggless mayo combine all ingredients expect canola oil listed under eggless mayo blend it till smooth. Add oil and blend it again.  Keep it aside.

10.  Take a burger bun, place a lettuce leaf.

11.  Pace the vegetable patty over it, followed by cheese slice, tomato and onion.
                                                                           


12.   Take the other bun and gently spread some mayo.
                                                                       
       

13.  Gently place this over  the pile and press down gently. Take care not to crumble it.
                                                                             


14.  Repeat the same with other buns and patties.

15.  Delicious veggie burgr is ready.
                                                                                


16.  You can use toothpick to hold it together just insert it through the centre of the burger.

17.  Serve warm and enjoy.
                                                                            



Notes

1.      You can use any vegetable of your choice and even dried beans and legumes.

2.      Take care not to overcook the veggies and pulses. You may not be able to shape it.

3.      You can shallow fry or deep fry the patties or bake them.

4.      Add tomato ketchup for extra flavor.
