Carrot Thoran

Carrot thoran? You guys may be wondering, why to post such an easy recipe 😕. Right …. Here I have made it a little easier. Even bachelors can try a hand at this 👍. Thoran is also a predominant dish in sadya / feast.  Thoran can be made with a variety of vegetables like carrot , beans, cabbage, spinach etc … I have posted broccoli thoran ealier. Unlike my broccoli thoran, carrot thoran is way too easy 😉.  Coconut is a must for thoran; here instead of using fresh grated coconut I have used desiccated coconut powder 😃. Have you ever tried thoran with desiccated coconut? When you are out of fresh coconut you can try this for sure 😉.  Please do try this recipe and tell me how it is … Okay then let’s get started.


Preparation time: 5-8 min

Cooking time: 8-10 min

Serves: 2


Ingredients

Carrot: 2

Curry leaves: few

Green chili: 2 (according to your taste)

Ginger:  1 small piece

Mustard seeds: ½ tsp

Coconut oil: 1 tbsp

Salt: as needed

Desiccated/ fresh coconut: 2 tbsp


Method

1.       Wash, peel and grate carrot. Set it aside.

2.       Slightly crush ginger, green chili and curry leaves with your fingers or with a motor –pestle. Keep it aside.
                                                                    

3.       Heat a pan, add oil.

4.       When it is hot enough add mustard seeds, when it crackles add crushed ginger, green chili and curry leaves.
                                                                             

5.       Sauté till it is semi-cooked, then add grated carrot.
                                                                      

6.       Add salt, cover and cook in medium flame till it is soft.  Mix it in between. Add water if it is sticking to the pan.
                                                                            

7.       Once it gets cooked add desiccated/ fresh coconut.
                                                                         

8.       Mix it and switch off the flame.

9.       Transfer to a serving dish.
                                                                            

10.   Serve with rice.

11.   Enjoy.
