Jingle bells, jingle bells 😃 … Jingle all the way … oh what fun it is to ride … in a one-horse open sledge...... 😃. Christmas 🎅 is around the corner and no Christmas 🎄 celebration is complete without baking a cake 🍰. Last year I had posted Christmas fruit cake the feedback I got from you all was overwhelming 😍😍. Thank you dear friends, so glad that you all liked the cake. This time I am here with dates cake. This cake is super soft, super fluffy and super yummy 😋. A simple, healthy eggless cake. Come on friends! Let’s celebrate this Christmas 🎅 with this yummy dates cake. Okay then let’s get started….

                                                                    


Preparation Time: 40-50 min

Cooking time: 40 min

Serves: 5-9


Ingredients

Chopped Dates: 1 cup

Whole wheat flour: 1 cup

All purpose flour: ½ cup

Melted butter: ½ cup (room temperature)

Condensed milk: 1 can /400 ml

Baking soda: 1 ½ tsp

Baking powder: 1 tsp

Nuts: ½ cup

Butter: 1 tsp
   
Sugar: ½ cup (optional)



Method

1.       Pre heat the oven at 180 C/350 F.

2.       Grease a 9’X 9’ baking pan with 1 tsp butter and set aside.
                                                                           

3.       Soak the chopped dates in warm water until it is soft approx 30 min.
                                                                      


4.       Puree the soften dates add little water if needed.
                                                                                     

5.       Add dates puree and condensed milk ( and sugar if using) to the melted butter.
                                                                           

           

6.       Mix and set aside.
                                                                                        

7.       Sift flour, baking soda and baking powder (dry ingredients), ensure that there no lumps.
                                                                                               

8.       Mix condensed milk mixture and flour mixture together and fold in the chopped nuts. 

9.       Pour the batter in to the greased baking pan. Give it a gentle tap.
                                                                                      

10.   Bake in the preheated oven for 35 - 40 min or until a tooth pick inserted comes out clear.
                                                                               
     

11.   Allow to cool and transfer it to a serving plate.
                                                                                        

12.   Slice and enjoy.
                                                                                       


Notes

1.       Adding sugar is purely optional. Condensed milk and dates gives the cake a rich flavor.

2.       You can add any nuts of your choice. Raisins can also be added.

3.       Cinnamon powder or cardamom powder can also be added along with the dry ingredients.  

4.       Cake can be stored in an air tight container for couple of days.
