Ash gourd Curry

 Simple Ash gourd  Curry/ Kumbalanga Curry


We all are busy almost all the days. Not having enough time to take care of the family . We even don't have enough time to cook. Healthy food is almost away from our daily routine. I am here with yet another simple and easy recipe. This is a perfect combo with rice . It will take hardly 5 min to prepare this . A pressure cooker recipe with ash gourd (winter melon). Mix all the ingredients and cook that's it. Okay , then let's get started.... 




Preparation Time : 10- 15 min

Cooking Time :       10- 15 min

Serves            :          3 -4 



Ingredients

Ash Gourd/ Winter Melon/ Kumbalanga  : 1 cup

Toor dal/ tuvara parippu / yellow pigeon peas: ½ cup

Onion : 1 (chopped)

Tomato (Ripe): 1  (chopped)

Green chili: 2-3 (chopped)

Chili powder:  As needed

Turmeric powder : 1 tsp 

Curry leaves: 1 spring

Salt: as needed

Tamarind/Valanpuli : optional

For tempering

Coconut oil: 1 tbsp

Mustard seeds: 1 tsp

Red chili: 2

Curry leaves: 1 spring

Fenugreek seeds / Uluva : ¼ tsp

Asafoetida/ Hing / Kayam: a pinch


Method 

1.Wash dal two-three times until the water becomes clear.

                                                                                                                                                                                                                                                    
          
                                               

2.   Pressure cook dal with enough water till it is ¾ cooked. Approximately 3-4 whistles. 

3.Cut the vegetables and set aside.

                                                                   
                          

4.Once the pressure is released from the pressure cooker add the chopped vegetables and curry leaves. 

                                                               
                            

5. Along with the vegetables add chili powder, turmeric powder and salt. Cook it for 1 whistle. 
                                                   
                               
                                               

6.  Prepare the seasoning .
                                                                   
                   

7. Once the pressure is released from the pressure cooker, add the seasoning.

                                                       
                                      


8. Simple and easy ash gourd gravy is ready in no time.

9. Transfer it to a serving bowl .

Notes

1.       You can add other vegetables too like cucumber, pumpkin.

2.       Using coconut oil gives you the best taste.

3.        If you are adding tamarind ,add according your taste.
