Kerala Fish Fry / Meen
Varuthathu
No meal is complete without a fish fry 🐟 for we Keralites. Almost
every day we have this for lunch. This
fish fry is tasty 😋 and easy to make 👍. It goes as an appetizer and also as a side
dish 😉. Any kind of fish 🐟🐠 can be used to make this but Sardine, Mackerel, Pomfret
and Pearl spot taste best. Here I have
used Golden Pompano. You have to prepare
a marinate for marination and then fry. Coconut oil is the best choice to fry 👌. Okay
then let’s get started....
Preparation time: 10 – 40 min
Cooking time: 20-25 min
Serves: 3-4
Ingredients
Golden pompano: 1(Any Fish )
Ginger garlic paste: 1 ½ tsp
Turmeric powder: 1 tsp
Kashmiri chilli powder: 3 tsp
Chilli powder: 2 tsp
Pepper powder: 1 tsp
Chopped curry leaves: 2 tsp
Water: as needed
Salt: as needed
Coconut oil: as needed
Method
1.
Cut and clean the fish pieces with salt and
turmeric powder.
2.
Prepare the marination with ginger garlic paste,
turmeric powder, Kashmiri chilli powder, chilli powder, pepper powder; chopped curry
leaves, salt and water.
3.
Mix the fish pieces with the paste. Allow it to
rest for like 15-30 min.
4.
Heat oil in a pan when it is hot enough throw in
the marinated fish pieces.
5.
Fry till both pieces turn golden brown.
6.
Drain the excess oil in a paper towel.
7.
Enjoy.
Notes
1.
You can add garam masala, coriander powder while
marinating.
2.
Lemon juice can be drizzled on top while eating
or can be added while marinating.
3.
Resting time after marination is important.
4.
You can also refrigerate the marinated fish
pieces and fry as and when you need. It stays good for 3-4 days.
