Parippu vada (lentil fritters) is everybody’s favorite 😍.  Since childhood I love them a lot …so ll you 😋… it is a tasty snack, which is available in almost every place. Tea and parippu vada is a superb evening snack which can’t be missed 😋. It is made with chana dal/ kadala parippu (a type of lentil). Along with dal you add onion, ginger and chili.  Including spinach to  this combo adds  a healthy twist 💪 and you have spinach vada!!! This healthy snack is worth trying 👍. They are a guilt free snack.  Okay then let’s get started.

Preparation time: 5-8 min

Cooking time: 10-15 min

Serves: 3-4

Ingredients

Chana dal / kadala parippu: 1 cup

Onion: 1 (chopped)

Spinach: 1 cup (washed & chopped)

Asafoetida / hing: 1 large pinch

Red chili: 4-5

Garlic: 2-3 cloves

Fennel seeds: ¼ tsp

Salt: as needed

Oil: to fry

Method

1.       Soak chana dal in enough water for 2-4 hours.

2.       Drain the water, transfer it to a mixer jar and grind it along with chili, fennel seeds, salt and asafoetida.

3.       Grind it to a coarse paste with few spoons of water.

4.       Transfer it to a bowl , add chopped spinach and onion to it.

5.       Give it a nice mix. Take a small ball from the batter and flatten it as shown.

6.       Heat a pan with oil, when the oil is hot enough fry the vadas till it turns brown in medium flame.

7.       Flip on to other side and fry till it turns brown in color in medium flame.

8.       Transfer it to a serving platter when both  sides gets cooked.

9.       Serve it with a hot cup of coffee/ tea.

10.   Enjoy.

Notes

1.       Don’t chop the onion too fine, it may get burnt.

2.       Cook the vadas in medium flame, vadas turns soggy if you simmer the flame. It may burn if the flame is high.

3.       Adding garlic helps to prevent acidity.
