White Forest Cake                                                    
Baking for someone you love is always special 😊. Last week my little one celebrated her birthday and I baked a special white forest cake for her 😍. She was too excited while cutting the cake 😘, and of course I was thrilled too 😃. Seeing her all excited made me super excited. She told she doesn’t need a cake from outside, "Amma you bake me a cake". I was totally confused what to bake.  As she is fond of white chocolates I baked a white forest for her 😍. The cake turned out exceptionally well. Unlike black forest here we don’t use dark chocolates instead we use white chocolates. Whipped cream, white chocolate and sponge cake are the main ingredients for a white forest cake. Here first I have baked two sponge cakes (vanilla), and then this is layered one above the other. The layers are filled with melted chocolate and whipped cream. Finally it is frosted with whipped cream and decorated with white chocolate shavings and cherry. The cake literally melts in your mouth 😋. I have used sugar syrup to make the cake super soft. Pls don’t skip this step it makes the cake real moist .So get ready to surprise your loved ones with this super soft white forest cake 😍. Okay then let’s get started.


Preparation time: 40min

Cooking time: 35-40 min

Serves: 8-10


Ingredients

For vanilla sponge cake

All purpose flour (maida): 2 ½ cup

Baking powder: 2 tsp

Baking soda: ¾ tsp

Butter: 6 tbsp (room temperature)

Egg: 3 (room temperature)

Milk: 1 ½ cup (room temperature)

Sugar: 1 ½ cup

Vanilla essence: 1 tsp


For sugar syrup

Sugar: ½ cup

Water: 1 cup


For whipped cream filling / frosting

Whipping cream: 2 cups

Icing sugar: 4-6 tbsp (according to your taste)

Vanilla essence: 1 tsp


For white chocolate cream

White chocolate: ½ of 4 oz pack (113.5 g)


For Decoration

White chocolate shavings: ½ of 4 oz pack

Cherries / strawberries: as needed


Method

Sponge Cake

1.       Preheat the oven to 350 F/ 180 C.

2.       Prepare two 9” inch baking tins.

3.       Combine egg and butter, beat it together.

4.       Add milk and vanilla essence to the egg milk mixture.
                                                                            

5.       Combine together flour, baking powder, baking soda. Sift the flour.
                                                                            

6.       Add the egg –milk mix to the flour mixture.
                                                                                 

7.       Combine everything together. Pour the batter to the prepared cake tins dividing the batter equally.

8.       Bake the cakes for 35-40 min or until toothpick inserted comes out clean.

9.       Allow to cool.

10.   Vanilla sponge cake is ready.
                                                                       

Whipped Cream
1.       Chill the glass bowl and blades for 2 hours. Add heavy whipping cream, icing sugar along with vanilla essence to the chilled bowl.
                                                                                

2.       Whisk until the cream reaches stiff peaks.
                                                                              

3.       Set it aside.

White chocolate cream
1.       Take white chocolate in a bowl and microwave it for 1 min or till it is completely melted.
                                                                                 


2.       Now add a couple scoops of whipped cream to the melted chocolate. Mix it. Keep it aside.
                                                                       



Sugar syrup
1.       Mix sugar and water together. Make sure sugar is completely dissolved before using it.
                                                                                

Chocolate shavings

1.       Using a vegetable peeler, scrape the blades lengthwise across the chocolate.
                                                                    

Assembling of cake
1.       Smear the sugar syrup over the cakes.

                                                          

2.      Place cake (slice) on a platter, trim off the burned sides and central portion to make it even.

                                                             
3.        Gently spread the white chocolate cream on to it.
                                                                           
4.       Place another cake (slice) over the first.
                                                                           

                                                                             
5.       Spread the whipped cream all over the cake and also on the sides.

6.       Decorate the cake using remaining whipped cream, chocolate shavings and cherries/ strawberries.

7.    Slice and enjoy.
                           



Notes
1.       If you are not dividing the batter, use a 15 inch cake pan. Then divide the cake in to two or three layers. Follow the same procedure for assembling.

2.       Chilled bowl and blades helps to fasten the process of making whipped cream.

3.       Pls refrigerate the chocolate shavings if not using it immediately.

4.       You can also add chopped cherries and strawberries in between the layers.

5.       Adding chocolate cream is completely optional; you can add whipped cream alone instead of chocolate cream.
