Aloo Gobi

                                                         
                                                       Potato - Cauliflower Fry
                                                             

Aloo Gobi / Potato Cauliflower fry is a North-Indian delicacy. It is made out of potatoes, cauliflower and other spices.  The added spices make it rich and flavorful.  Aloo Gobi is my favorite among all North Indian dishes. It’s a perfect combo for any bread, naan or chapathi (Indian flat bread).This is my second North Indian side dish. After Aloo methi I didn’t post any north Indian recipe. This is a very easy and simple recipe but care should be taken while cooking this. Cauliflower may not get cooked properly water can be added but adding more water might make the dish soggy and mushy. So please take care not to overcook or undercook cauliflower. Ok then let’s get started.

Cooking time: 30 min

Serves: 4


Ingredients

Potato: 2 (medium size)

Cauliflower: 1 (small – medium)

Garlic: 2 cloves (finely chopped)

Ginger: 1 inch (finely chopped)

Tomato: 1 (small, chopped)

Cumin seeds: 1 tsp

Turmeric powder: ½ tsp

Chili powder: 2 tsp

Coriander powder: 1 tsp

Salt: to taste

Oil: as needed.

Cilantro leaves : 1 tbsp (chopped)

Whole garam masalas:
Cloves: 2
Cardamom: 2
Cinnamon: 1 inch
Bay leaves: 1


METHOD

1. Cut cauliflower in to florets and rinse it well.  Soak it in lukewarm water along with a tsp of salt and turmeric for a good 5-10 min. Drain it and set aside.

2.  Heat oil in a pan

3. Add cumin seeds; once they crackle add whole garam masala.

4. Add onion sauté it well.

5.Once they get sautéed add ginger – garlic.
                                                      

6.  Add tomatoes. Followed by potatoes. Cover the potatoes with a lid smaller than the pan and cook it in low medium flame until the potatoes are well roasted. Don’t add water.

7. Once the potatoes get well roasted add cauliflower. Sauté it well for 2 minutes.
                                             

8.  Add turmeric powder, chili powder followed by coriander powder and salt.

9.  Mix everything together and cook the florets until it gets cooked adding 1-2 tbsp of water in between.

10. Cook cauliflower in the same way as we cooked potatoes. Stirring 2-3 times in between.

11. Once the cauliflower gets cooked add cilantro leaves and switch off the flame.
                                                    

12. Yummy aloo gobi is ready. Transfer to a serving bowl. Serve with roti, bread or rice.

13. Enjoy.
                                                  



Notes

1. Rinse and soaking of cauliflower is a must as it helps to get rid of pesticides and bugs if present.

2. Crush the whole spices and add it to get that special flavor of garam masalas.

3. You can replace tomatoes with a tsp of lemon juice or amchur powder (dry mango powder).

4. Take care while adding water when cooking cauliflower.
