 Come October and you have pumpkins all around. Fall is the perfect time to add pumpkin to your dishes. It goes hand in hand with the fall holidays of Halloween and Thanksgiving. Carving pumpkins into jack -o’- lanterns is a famous Halloween tradition. These orange colored pumpkins are rich source of vital antioxidants and vitamins. Pumpkin seeds are a great source of proteins, minerals, vitamins and omega -3 fatty acid.  You can make a variety of dishes with pumpkin like bread, muffin, pie and soups.  Here I have tried pumpkin soup with small sugar pumpkins. This soup comes together quickly and has warm notes of pepper and garlic. This is a simple and easy recipe. No cream and no broth. My little one went pumpkin patch from school and brought this sugar pumpkin. She told she wants pumpkin soup so thus here it is. Ok then let’s get started.





Preparation time: 10-15 min

Cooking time: 15-20 min

Serves: 3


INGREDIENTS

Sugar pumpkin: 1

Garlic: 2 cloves

Pepper corns: 2 no

Dried Red chili: 1

Salt: as needed

Water/coconut milk/ milk: ½- 1 cup

Coriander leaves: as needed (optional)

Croutons: as needed


Method

1.       Peel the skin from pumpkin, cut in to chunks remove the seeds.

                                                          

2.        Cook the pumpkin chunks till soft.

3.       Allow it to cool.

4.       Grind pepper, garlic and red chili.

5.       When the pumpkin chunks gets cool blend it along with pepper- red chili paste.

                                                 

6.       Transfer the contents to a sauce pan and add coconut milk/ milk/water.
.
7.       Boil it till you get the needed consistency.

                                             

8.       Transfer it to a serving bowl.  

                                             

9.        Garnish with coriander leaves/ croutons.Serve warm
                                               
                                           


10.    Enjoy.


NOTES

1.       You can add any spices according to your preference.  Ginger and cumin can be added.

2.       You can skip adding pepper corns or red chili if you don’t want it to be spicy.

3.       Try adding coconut milk/milk for a rich flavor.
