Egg Puffs

Egg puff is a very popular snack in India. After coming to US I was missing those a lot till I came to know that egg puffs are very easy to prepare using readymade pastry sheets.  These are crunchy and crispy, a perfect tea time snack. Egg puffs are a main attraction in all bakeries and canteens.  With readymade puff pastry sheets these are too easy to prepare. The boiled eggs are sautéed with onions and other flavorful ingredients and wrapped in pastry sheets are just yum. Egg can be replaced with chicken or any other meat/vegetables. I’m sure it will be a treat to all your loved ones. It can be served as a snack or as an appetizer. A perfect item for your parties. Give it a try and surprise your friends and family. Ok then let’s get started.




Preparation time: 20min

Cooking time: 20 min

Serves: 1 pastry sheets gives 6 puffs


Ingredients

Puff pastry sheets: 2

Egg: 6 (boiled and sliced into halves)

Onion: 1 large (finely chopped)

Green chili: 2 (finely chopped)

Ginger: 1 inch piece (finely chopped)

Garlic: 3-4 cloves (finely chopped)

Curry leaves: 3-4 leaves (chopped)

Turmeric powder: ¼ tsp

Kashmiri chili powder: 1 tsp

Pepper powder: ½ tsp

Garam masala: 1 tsp

Tomato ketchup / paste: 2 tsp

Oil: as needed

Salt: as needed

Egg white: 1 egg (well beaten)

All purpose flour: (as needed for dusting)


Method

1.      Thaw puff pastry sheets as instructed.

2.       Heat a pan, add oil. Once the oil is hot enough throw in the chopped onions.
                                                   

3.       When it is well sautéed add green chili, ginger, garlic and curry leaves.
                                                          

4.       Add in turmeric powder, Kashmiri chili powder, pepper powder and garam masala.
                                                           

5.       Add tomato ketchup. Mix everything together.
                                                             

6.       Add the sliced eggs and mix well so that the masala coats the egg. Take care not to break the eggs.
                                                           

7.       Keep it aside.

8.       Cut the thawed sheets in to squares.
                            

9.       Slightly roll the rolling pin over it just to slightly flatten it so that it is easy to place the egg and masala.

10.   Before rolling slightly dust the rolling pin and surface with flour.

11.   Put the onion masala over the square and then place an egg over it.
                                                     

12.   Seal the edges using your fingers. Seal it well otherwise it may break open while getting baked.
                                                            


13.   Brush egg white on the top of the pastries or slightly rub egg white over the puff using your fingers.
                                                     

14.   Preheat the oven to 400F/ 200C.

15.   Line a baking tray with aluminum paper and grease oil over it.
                                                        

16.   Transfer the tray to the preheated oven.

17.   Bake for 15-20min or till the puffs turn golden brown on top.
                                                        

18.   Transfer the puffs to a serving plate.
                                                 

19.   Serve warm with tea or coffee.

20.   Enjoy.
                                                 
                                                  

Notes:

1.      You can follow the same procedure for chicken / mutton/ vegetables. Replace egg with desired ingredient.

2.      If you are baking vegetable puff replace egg white with milk.

3.      Thaw pastry sheets according to instructions.

4.      Check for salt after adding tomato ketchup as ketchup itself as some salt. 

5.   Serve warm as far as possible as puff loses its crunchiness once it gets cold.
