Orange Cake

This is my first post … ..thought it would be nice to start with something sweet .  I love baking  :-) Everyone goes gaga over Cakes.This cake is not only simple & delicious but it tastes better the next day.  There is no icing  or frosting so its very simple with few ingredients. Anybody can bake this cake. This is a super moist, soft and flavorful cake.  The light yellow color of the orange juice makes us tempting to eat it. I’m sure you will love it . so…. Let’s get started ….




Preparation time: 10-20  mins
Cooking time:     25-35 mins
Serves: 7

INGREDIENTS

All purpose flour: 1 ½ cup

Baking powder: 1 ½ tsp

Baking soda: ½ tsp

Egg: 2 (room temperature)

Sugar: ¾ cup

Oil:  ½ cup

Orange juice:  ½ cup (freshly squeezed)

Orange Zest: 2 tsp 

Butter: as needed (for greasing)


METHOD

1. Preheat oven to 350 degrees F / 180 degrees C.

2. Prepare a 9 inch bake tin by lining it with parchment paper and grease it with butter.  Keep it aside.

                                                  

3. Squeeze oranges with the help of a juicer and grate oranges as shown to get the zest. Make sure to take off only the rind of the orange skin and not the bitter pith inside. Keep it aside.

                                           
                          

4. Crack eggs in to a bowl, add sugar. Beat it together until sugar dissolves.

                                      

5. Then add orange juice, oil and orange zest. Combine it well. Set aside.

                                     
              

                       
6. Mix flour, baking powder and baking soda. Sift the flour.

                             

7.  Fold in sifted flour into orange juice-egg mixture in 3-4 batches.

8. Spread batter in prepared pan. Gently tap it to remove air bubbles.



                                       
9. Bake in pre-heated oven for 25-35 mins or until a toothpick inserted into cake comes out clean.

                              

10. Allow it to cool. Carefully invert cake onto serving platter.

                                     

11. Slice and enjoy.

NOTES:

1. Try to use freshly squeezed orange juice as far as possible.

2.  You can use any flavorless refined oil. I used vegetable oil.

3. You can replace egg with fresh thick yogurt (flavorless).  If so use 1 egg: ¼ cup yogurt.
